Summer is here, and so are the ice cold cocktails. While I’m not a huge drinker, I definitely enjoy a nice cocktail every once and awhile, especially when I’m hanging out with some friends. There’s nothing like relaxing on a lounge chair after a long day and enjoying a drink. By a pool would be even better, however I don’t have one of those. Maybe one day…
As a representative for Bluebird Tea Co. one of my responsibilities each month is to create a recipe using at least one flavor of tea. I thought a mixed drink would be appropriate as the weather warms up. As part of their summer collection, Bluebird has released a pineapple sorbet tea that is perfect for summer time! Chinese Chunmee green tea, lemongrass, sumac berries, freeze-dried pineapple, lemon peel, and calendula petals make for a perfect refreshing and fruity blend.
After tasting pineapple sorbet a few times I knew it was the tea I wanted to use for my mixed drink. Using a cold brew bottle, I infused vodka with tea for 14 hours to ensure a strong flavor.I used pineapple juice and coconut flavored seltzer as my mixers before adding the infused vodka. I love pineapple and coconut, and when they’re combined together the flavor just screams summer. A little sugar and some mint leaves and the drink is complete!
Before making this cocktail I was always under the impression that mixed drinks had to be complicated. In reality, mixed drinks can be quite simple to make. They’re also really fun! I really enjoyed figuring out what ingredients to buy, and then combining them all in the right amounts to create a delicious drink. If you’ve never made up a drink before, you should really give it a try!
Recipe – Makes 2 – 3 drinks
- 3/4 cup vodka
- 6 tsp. Pineapple Sorbet tea
- 1 cup pineapple juice
- 1.5 cup coconut flavored seltzer
- 1/2 tsp sugar
- 5-7 mint leaves (more for garnish is preferred)
- Infuse the vodka with the pineapple sorbet for 12-24 hours
- Combine the vodka, pineapple juice, and seltzer
- Crush the mint leaves using a mortar and pestle or rolling pin
- Add in mint leaves and sugar
- Give the drink a good stir before adding some ice
